I have seen some account transfer forms that have a check box that instructs both custodians on what to do. If you elect to do a full account transfer and select the box to liquidate assets they should be able to do that. If it is complicated I would either call the new custodian and tell them exactly what you want done, and/or sell the proprietary funds and buy something transferrable on the old custodian side prior to the transfer. The old firm will not liquidate prior to transfer? You have have two choices: sell the non-transferable security and transfer cash, or leave the security with your old firm.
If you want to cleanly sever relationship with the old firm, sell first and transfer cash.
