While on vacation in an area of the US northeast with great farmers markets and produce stand, I bought some picked-that-day bell peppers, ripe tomatoes, and onions. In the AirBnB I made a very simple late summer dish my mother taught me back when my father tended a huge vegetable garden. It's like ratatouille but not cooked as long, so it really shows off the fresh veggie flavors:

Quarter the onions (or cut in eighths if they're large), cut the bell peppers into large chunks, and cut the tomatoes in quarters or eighths. Sauté the onions in olive oil until just soft, then add the peppers and sauté until they are just done. Add the tomatoes and cook until their juices just begin to run (a few minutes at most). Season with salt and pepper, and serve over rice or potatoes.

We used to make this with bacon (cut into dice and sauté until just soft, pour off some of the bacon fat, then proceed with the recipe above using the remaining bacon fat instead of olive oil), which is even more delicious. But not something my vegetarian family will eat. It's almost as good with olive oil instead.
