With electric, the way you immediately drop or raise temperature is by removing the pan from the burner, and or moving the pan back to the burner, which takes about the same amount of time as turning off the gas or re-igniting it.Mountain or molehill, one interesting factor will be how to convince my wife to consider an induction range.
In our previous home, she was fine with a gas range, though thought it more difficult to keep clean. Then we moved to a home with an electric range, which presented some annoyances at first (e.g., can't immediately drop or raise temperature), but after a period of adjustment now thinks it's fine. In fact, I believe she is leaning toward replacing it with another electric range, balking at the propane installation cost.
So, since there are so many advocates for induction, what led you to make the initial choice, and why is it so great? Note that I'm not disagreeing; I'd give it a shot, but the other majority shareholder would need to be convinced.
On a side but related note, are there any particular brands to avoid? And/or recommended ones to look into?
I'd go with electric over the propane conversion, higher end glass top only though.
