You can spend a lot of time figuring out the Ethernet solution, or you can buy the Eero and be done in 30 minutes. Your choice.
Also, you're being ripped off renting the router from the ISP, and obviously it doesn't even deliver the benefit you thought it would.
ETA: I highly recommend the Eero Pro 6 over the regular models and even over the newer Pro 6E. Unlike the regular models, the Pro 6 has a dedicated "backhaul" (for communicating between the nodes, which performs better since they're not sharing bandwidth with your wifi devices), and more powerful antennae than the 6E. I installed three of the Pro 6 in a very large (5000+ sq ft) home and it works great. Amazon sometimes has good deals on refurbs, which are like-new.
Yes, I pay $15/month for the router rental. Before, I didn't mind doing this because we had a history of subpar hard wired speeds, and the company would always ask if we were using their equipment (and if not, that's where their trouble shooting stops and they recommend to rent their equipment). Also, new routers were coming out frequently so we received free upgrades about once a year. Which is the same cost as buying a new router every year. But I see how it is expensive and potentially a rip off if I can find 1 system and keep it for longer.
My next question was exactly what you addressed here. Which Eero do I choose? As amazon has several options. Eero Pro 6 has a refurb, below (1), for $175. Does that replace my current router, or is that just an extender?
The 2 links after are the highest rated system, supports 500mbps, which seems fast enough but we have a then the newer system
