I agree with you. I already do all those things. Accidents can still happen, even if unlikely. For example, you may not be able to avoid debris that cause a tire to blow. You could be considered at fault for this in CA. I just don't believe it's possible to eliminate the risk completely.Just don't be an at-fault driver then. Don't speed through yellow light, don't follow too closely, don't race to the red light, don't change lane just for the sake of trying to move faster than traffic. Here's a big one: don't drive under influence.

Whether Uber is cheaper than driving depends on circumstances such as mileage. We live in a car dependent area, and it would definitely be inconvenient if we didn't have at least one car.
