I'm making Dayton's Wild Rice Soup (Minnesota favorite)

- 1 cup wild rice
- 6 cups chicken broth
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced carrots
- 2 cups cooked, diced chicken
- 2 cups half-and-half
- 1 tsp salt
- 1/2 tsp black pepper
- Cook the wild rice according to package instructions.
- In a large pot, melt the butter over medium heat.
- Add the onion, celery, and carrots, and sauté until the vegetables are tender.
- Sprinkle the flour over the vegetables and stir until well combined.
- Add the chicken broth, stirring constantly to prevent lumps from forming.
- Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.
- Add the cooked wild rice and diced chicken to the pot, and simmer for an additional 10 minutes.
- Stir in the half-and-half, salt, and black pepper, and heat through.
