I'm making Dayton's Wild Rice Soup (Minnesota favorite)

Ingredients
  • 1 cup wild rice
  • 6 cups chicken broth
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced carrots
  • 2 cups cooked, diced chicken
  • 2 cups half-and-half
  • 1 tsp salt
  • 1/2 tsp black pepper
Instructions
  • Cook the wild rice according to package instructions.
  • In a large pot, melt the butter over medium heat.
  • Add the onion, celery, and carrots, and sauté until the vegetables are tender.
  • Sprinkle the flour over the vegetables and stir until well combined.
  • Add the chicken broth, stirring constantly to prevent lumps from forming.
  • Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.
  • Add the cooked wild rice and diced chicken to the pot, and simmer for an additional 10 minutes.
  • Stir in the half-and-half, salt, and black pepper, and heat through.
