My iPhone has only eSIM and I am traveling to India for a month+. I have an Indian eSIM already on the same phone (got it on my last visit and paid for 1 year). Will I be able to get texts sent to my US SIM if I turn the cellular function off?
In airplane mode, yes. If you disable the US eSIM, no.

It is usually a good idea to disable automatic network selection on your US SIM before you leave, then your phone never attempts to connect to any potential roaming carriers.
You need to turn off roaming. Turning off automatic network selection does not disable roaming AFAIK.
