Default seller could change. Sometimes on groceries it defaults to Amazon Prime instead of Amazon Fresh and price can be different. Price can change a lot. I've seen 50%+ fluctuations on food items over the course of a day or two. There could also be buggy cases of eventual consistency. Ideally this would be engineered correctly, but it doesn't mean there are never any bugs. (Most likely anything like this would be corrected by the time you check out.)
If you do notice and are charged the wrong price (verify which seller you actually bought from), you could probably get in a chat with customer service and explain inconsistent pricing, you were overcharged, their actions violate pricing transparency policies, etc., and get a token $5 credit or something.
