Depends on how you want to define "better"...Which is better? Eero mesh with wired backhaul or Ubiquiti access points?
The newer Mesh networks can support > 1 GB speeds, especially over their intra node connections (with options like Eero supporting "wired" devices connecting at "full speed" (usually limited by most devices being <= 1 GB ports). So unless your wired network and connected devices are all > 1 GB (which I doubt), I'd argue the [newer] Mesh networks can provide as much (if not more) "speed" with nearly as little latency (or low enough as to likely never be meaningfully different).
For what it's worth, the https://www.ui.com/wifi shows - at least the newer APs, provide a Mesh network - including over wireless if you have an area not connected by a wired connection. So it's not an "either / or" discussion - you'll end up with a mesh network with your approach.
And on its own, a wireless mesh network isn't going to support PoE. Sounded like you have (or plan to have) PoE devices (like security cameras). Don't think my Eero devices support that directly, I'd have to add a PoE switch to the areas I'd want to add the devices... But then again, I've been happy with "wireless" devices (such as Blink cameras - battery powered for complete wireless and no required subscription).
So I'm not trying to "talk you out" of your plan... By all means, take advantage of the wired backbone you had installed!
But I'd just reiterate - for "most" uses - on a modern [aka 6E or higher] mesh network with adequate coverage - you'd be hard pressed to notice the difference between a "wired" and "wireless" connection. Oddly, "wireless" is becoming faster by default - as I've seen more [end-user] devices supporting WiFi 6/7 than I have supporting > 1 GB Ethernet (so "wired" is limited by the Ethernet port speed, while "wireless" is limited by the network). Which is to say, don't feel "forced to wire everything"... With a good mesh network (which seems to include Ubiquiti devices), "wireless" is a viable option.
