Moving to a DIY 3-fund portfolio from an AUM arrangement is reasonable and will reduce your investment costs significantly. Consider remaining at Fidelity for simplicity as the majority of your portfolio is there. Personally I prefer Fidelity over Vanguard.

The three Fidelity funds you listed are good building blocks for a 3-fund portfolio. You also have the option of using the proprietary Fidelity zero-ER equity funds (FZROX, FZILX, etc.) in tax advantaged accounts.
