This sounds like a typical valve replacement in a tub or tub/shower that's tiled.
Can be done from the tile side.
Sometimes the back side with drywall may need to be accessed.
If this is the case, the dust is typically minimal and can be controlled with plastic, wetting walls, HEPA vacuum.
I've done it with vacuum cleanup only and no issues.
With your situation, I personally would NOT do anything without first writing out exactly what and how I will do things, signed with your approval, along with signed documentation of zero liability to anyone's health as a result of work performed.
