Since moving into Schwab, I have no data of my cost basis.
I can pull old cost basis information from statements I saved from Edward jones, but when it comes to tax season, how will that work? If I provide both tax documents from both brokerages, will that suffice or will there need to be more back end work on my end?

What are your opinions on VOO vs VTI? I ask because I hold about 30 shares of VOO
2nd, if you have the cost data from EJ, you can later use it to override any 1099-B reported cost by the new borkerage, if the ACATS transfer of cost data has failed. I would expect in the event of Schwab does not receive the cost data, they will accept cost statements you have from EJ. It is a smart thing to always get and save the old brokerage's cost data before a transfer, just in case.
