***Pre-emptive Defensive Rant: Yes, I know that the ROI on becoming a vet versus the cost of the degree is a bad one that some Bogleheads would shake their head at disapprovingly. We have been through that analysis and discussion ad nauseum and my daughter is well aware of the tradeoffs. This is her passion!****
I know nothing about funding kids' education, so I won't answer your question, but I wanted to react to this.

ROI is one thing. Making a huge amount of money is one thing. But it's not everything, and I'll argue that once you reach a level of profession that pays well, even if others are paying more, it's not the most important. Your daughter is going to have to get out of bed every morning for the next 30 or 40 years, and go to work. She'll be better off doing something she enjoys and finds purpose in, than doing something she doesn't enjoy but pays a lot more.

As a vet, she'll be just fine. She'll be happy and financially secure. Better that than filthy rich and miserable. Especially when she seems to have been raised by someone with a good head on their shoulder.
