I add different combinations of: finely chopped walnuts or dry-roasted peanuts, fresh cilantro, frozen asian-style vegetables (add this in while the water is boiling), chopped fresh spinach, fried egg, frozen shelled edamame, toasted sesame oil, sambal oelek. I don't have a favorite noodle packet just a vegetarian one. Despite all of the healthy ingredients that I add, I still always feel a bit guilty after I make this type of meal with the fried noodle packets.
Once you soup it up its a pretty big meal for one person. Splitting it 2 ways makes it pretty healthy, only about 200-250 calories from the packet each. I add a spoon of miso paste, gochuchang, and some rice vinegar to the broth.
It is a lot of food. I have broken the noodle brick in half, and guesstimated using only half of the seasoning packet, and it turns out fine given all of the ingredients that I add.
