Regarding dashcams, take a look if a Dongar adapter (not sure if it would be a 10 or 12 pin) is a viable option. I mounted a Viofo A119 mini behind the rear view mirror and installed the Dongar dongle between the overhead console and rear view mirror. This gave me a USB port to plug in the dashcam. It's probably slightly different on the newer Crosstrek, but lots of videos and writeups on YT and Amazon.Thank you all. Yesterday we purchased the 2025 Crosstrek Premium with Package 14 (Blind spot, Rear Cross Traffic plus moonroof, etc) with 4,400 miles on it for just over $27k before tax, fee, etc. It had been a dealer loaner, mostly for customers with cars in the service department.
I've ordered all weather floor mats from Amazon as it came with cloth mats which won't do well with our snowy weather. I'm also looking at dash cams, looks like it should be able to plug in right behind the rear view mirror. Not sure if we should get a rear facing camera also, that will probably be another post.

For the rear, my Outback has a rear 12v power outlet, so I simply installed a separate dashcam in the rear and used that outlet instead of using a 2 channel dashcam and trying to run a cable from the front.
Also, make sure to use High Endurance SD cards - Sandisk and Samsung have worked well for me (4 dash cams & continuous recording Wifi cameras).
