I bonds are the only investment that easily meet all of your criteria.What should I buy for stable portion of my 75:25 portfolio? I want inflation protection and no loss in value. So far I have used total bond index but dont like its instability.

An option for additional money are individual TIPS held to maturity. The key here is "held to maturity". If you hold to maturity, you know the value of the investments at maturity when you purchase the TIPS.
The problem with this strategy is if you want to spend some of the money invested in an individual TIPS prior to its maturity date, then you will be subject to market pricing of the TIPS when you sell it.
If this is a long-term investment, then you could purchase a longer duration TIPS or purchase a shorter duration TIPS and buy another TIPS when this one matures.
The key for having "no loss in value" is holding the individual TIPS to maturity.
